Chicken Caesar Salad

Ingredients:

2 heads of Cos lettuce
1 garlic clove
1 tbsp of olive oil
400 g chicken breast
4 eggs
3 slices of whole meal bread

Dressing

1 egg
1 tbsp lemon juice
1 tsp white wine vinegar
1/2 cup grape seed oil
8 anchovies
Freshly shaved parmesan cheese

Method:

  1. Wash and dry lettuce leaves
  2. Mince garlic and lightly fry with olive oil until garlic is golden.
  3. Wash and slice chicken breast into thin strips
  4. Add chicken to garlic and continue to fry until chicken is golden
  5. Remove chicken from heat and set aside
  6. Bring water to boil
  7. Place eggs in saucepan and cover with boiling water
  8. Set on low heat and continue to cook for 2 – 3 minutes or until hard
  9. Remove eggs from heat and peel. If desired slice eggs evenly
  10. Place bread in toaster. When golden cut into cubes to make croutons
  11. Make dressing by combining egg, lemon juice, white wine vinegar salt and pepper
  12. Slowly whisk in grape seed oil until mixture is thick and smooth
  13. Place lettuce into serving bowl, top with chicken, croutons, sliced egg and anchovies
  14. Cover with dressing and serve
