Ingredients:
1 skinless chicken breast
2 tbsp low fat grated Mozzarella cheese
1/2 capsicum
1/2 cup mushrooms
1/2 clove garlic
1 tsp tomato paste
1/4 cup water
Olive oil
Salt and pepper
Tortilla wraps (optional)
Method:
- Mix water, tomato paste, salt and pepper
- Pound chicken breast until thing then slice into cubes
- Crush garlic
- Heat olive oil in pan and add garlic and chicken
- Stir through tomato mixture, capsicum and mushrooms
- Place in tortilla wraps before topping with grated cheese
