Chicken Salsa

Ingredients:

1 skinless chicken breast
2 tbsp low fat grated Mozzarella cheese
1/2 capsicum
1/2 cup mushrooms
1/2 clove garlic
1 tsp tomato paste
1/4 cup water
Olive oil
Salt and pepper
Tortilla wraps (optional)

Method:

  1. Mix water, tomato paste, salt and pepper
  2. Pound chicken breast until thing then slice into cubes
  3. Crush garlic
  4. Heat olive oil in pan and add garlic and chicken
  5. Stir through tomato mixture, capsicum and mushrooms
  6. Place in tortilla wraps before topping with grated cheese

Serves 3 – 4
