Chicken Soup

Ingredients:

carcass of 1 medium chicken (no stuffing)
350 g of shredded chicken meat
2 carrots
2 celery stalks
1 zucchini
1 onion finely chopped
1 red capsicum
1 green capsicum
1/2 lemon
3 garlic cloves
3 bay leaves
1/4 tsp thyme
1/2 tsp rosemary
2 tbsp oil
Salt and pepper to taste
1 litre of water

Method:

  1. Heat oil in large saucepan over medium heat
  2. Add garlic, bay, thyme and rosemary and heat until aromatic and sizzling
  3. Add remaining ingredients
  4. Add water
  5. Simmer for 25 minutes
  6. Remove carcass, lemon and herbs
  7. Taste soup and adjust seasoning to taste

Serves 4 – 5
