Ingredients:
carcass of 1 medium chicken (no stuffing)
350 g of shredded chicken meat
2 carrots
2 celery stalks
1 zucchini
1 onion finely chopped
1 red capsicum
1 green capsicum
1/2 lemon
3 garlic cloves
3 bay leaves
1/4 tsp thyme
1/2 tsp rosemary
2 tbsp oil
Salt and pepper to taste
1 litre of water
Method:
- Heat oil in large saucepan over medium heat
- Add garlic, bay, thyme and rosemary and heat until aromatic and sizzling
- Add remaining ingredients
- Add water
- Simmer for 25 minutes
- Remove carcass, lemon and herbs
- Taste soup and adjust seasoning to taste
