Ingredients:
2 large leaves of Cos lettuce
2 large handfuls of rocket
1 large handful of watercress
1 red onion
1 cucumber
1 avocado
1 firm capsicum
Black olives
Anchovies
2 eggs
Method:
- Wash and slice all greens (lettuce, rocket and watercress) and set aside
- Peel and slice onion finely before combining with greens
- Wash and slice cucumber and capsicums before adding to greens
- Open capsicum and remove pit before slicing and adding to salad
- Hard boil 2 eggs by placing in boiling water on low heat for 4 – 5 minutes
- Remove eggs from heat and allow to cool before peeling and slicing
- Add sliced eggs to salad and combine with olives and anchovies
Serves 2 – 3
