Mediterranean Salad

Ingredients:

2 large leaves of Cos lettuce
2 large handfuls of rocket
1 large handful of watercress
1 red onion
1 cucumber
1 avocado
1 firm capsicum
Black olives
Anchovies
2 eggs

Method:

  1. Wash and slice all greens (lettuce, rocket and watercress) and set aside
  2. Peel and slice onion finely before combining with greens
  3. Wash and slice cucumber and capsicums before adding to greens
  4. Open capsicum and remove pit before slicing and adding to salad
  5. Hard boil 2 eggs by placing in boiling water on low heat for 4 – 5 minutes
  6. Remove eggs from heat and allow to cool before peeling and slicing
  7. Add sliced eggs to salad and combine with olives and anchovies

Serves 2 – 3
