Ingredients:
2 cups shredded chicken (left over roast chicken works very well)
2 tomatoes
2 onions
1/4 tsp of garlic
1 tbsp olive oil
Chilli or Tabasco Sauce to taste
2 large lettuce leaves
Soft tortilla wraps or mountain bread
Method:
- Heat oil in small frying pan
- Add garlic and onions
- Add tomatoes and continue to fry until onions are soft
- Stir chicken through mix until coated
- Remove from heat
- Remove excess liquid and set aside
- Wash and slice lettuce
- Place lettuce onto wraps and spoon with chicken mix into the centre
- Add Tabasco Sauce or Chilli before wrapping
