Stir Fried Fish

Ingredients:

1 piece of trout, perch or salmon
3/4 cup of stir fry vegetables (broccoli, beans, carrots, zucchini)
1/4 cup onion
1/2 clove garlic
Olive oil
Salt and pepper

Method:

  1. Slice onion finely
  2. Crush garlic and place with onions
  3. Clean fish under running water and remove scales
  4. Place olive oil in shallow frying pan on medium heat
  5. When oil is lightly bubbling, stir in crushed onion and garlic
  6. When onions are soft and clear add fish
  7. When fish becomes white (dark pink for salmon) and flaky turn onto other side
  8. When fish is crisp on both sides remove from pan and set aside to cool
  9. Lightly fry vegetables before removing from heat and placing on top of fish
  10. Season lightly with salt and pepper
  11. Serve with rice, noodles or salad
