Ingredients:
1 piece of trout, perch or salmon
3/4 cup of stir fry vegetables (broccoli, beans, carrots, zucchini)
1/4 cup onion
1/2 clove garlic
Olive oil
Salt and pepper
Method:
- Slice onion finely
- Crush garlic and place with onions
- Clean fish under running water and remove scales
- Place olive oil in shallow frying pan on medium heat
- When oil is lightly bubbling, stir in crushed onion and garlic
- When onions are soft and clear add fish
- When fish becomes white (dark pink for salmon) and flaky turn onto other side
- When fish is crisp on both sides remove from pan and set aside to cool
- Lightly fry vegetables before removing from heat and placing on top of fish
- Season lightly with salt and pepper
- Serve with rice, noodles or salad
