Ingredients:
2 1/2 cups strawberries
4 tbsp sugar
1/2 cup vanilla yoghurt
1/2 tsp almond extract
4 tbsp finely chopped almonds
4 large peaches
Lemon juice
Method:
- Remove stems from strawberries and slice
- Place in a bowl with 2 tbsp sugar and 2 tbsp almonds
- Mix thoroughly and allow to sit for 20 minutes
- Slice peaches in half and remove pits
- Sprinkle with lemon juice to prevent fruit going brown
- Serve in a small plate or bowl with pit side up.
- Combine yoghurt with sugar, almonds and strawberries.
- Spoon mixture into indentation of peaches and top with remaining strawberries and almonds.
