Ingredients:
500g zucchini
1 onion
3 medium sized tomatoes
1/2 tsp of basil
1 tbsp balsamic vinegar
1 tbsp olive oil
1 tbsp lemon juice
Method:
- Cut zucchini and tomato into small cubes
- Finely chop onion
- Heat zucchini, tomato and onion until soft.
- Combine with basil, red wine, olive oil and lemon juice
- Serve with bread rolls
